Braised Garlic Short Ribs with a Red Wine Tomato Sauce



Braised Garlic Short Ribs with a Red Wine Tomato Sauce
Prep Time: 20-30 minutes
Cook Time: 2-2? hours.


Serve with: Mashed potatoes, rice or egg noodles and saut?ed zucchini. Dessert: Dulce de leche ice cream with toasted almonds.


2 lbs. beef short ribs (seasoned) 15 cloves of garlic (whole) 1 lb. onions (medium diced) 1 stalk of celery (medium diced) 1 each carrot (peeled, medium diced) 14 oz. can of tomato sauce 2 beef bouillon cubes 12 oz. red wine (Cabernet, Merlot, or Table)


Season short ribs liberally with salt and black pepper, and rub lightly with olive oil, in a 5quart capacity (heavy gauge) sauce pan. Sear ribs on all sides on medium high heat.


Remove ribs. Add a couple of ounces of olive oil. Add garlic, onions, celery, and carrots. Brown vegetables until edges are nicely caramelized. Add red wine and bouillon cubes and bring to a boil making sure to scrape bottom and sides to loosen fond. (Editors note: That's Chef Phil's fancy way of saying scrape the stuff off the sides.) Add tomato sauce. Bring to a boil. Add ribs. Put in a 300? F oven and cook 2-2? hours.


Remove ribs. Strain off vegetables and serve with mashed-potatoes, rice or egg noodles and saut?ed zucchini. Enjoy.

Humidity
The second factor to watch in your wine storage area is humidity. You want to aim for a humidity of around 80%. Humidity fluctuations aren't nearly as bad for wine as temperature. The prime reason to watch humidity is because a high humidity hurts the labels, which hurts the bottle's resale value. A low humidity dries out the cork, even if the bottle is properl stored on its side in order to keep the cork moist. This could let oxygen into the wine - a rare occurrence, but still something to be watched for.

It is very important to select the best matched food with any wine; a wrong choice of food can spoil all the fun and taste of a very good wine. Salty dishes work well with acidic wine. Sparkling wines like Californian wines or French champagne can be used to refresh the taste of fish dishes. Bubbly wines are used to drink with spicy food. Food from South East Asia (like Thai) is filled with chilly and pepper. These food items are compiled with citrus acid, so wines with acidic taste are with some flavour of sweetness. Wines with lots of fruit are mostly prescribed for this kind of food.

Game birds such as quail, turkey, guinea have earthy taste which is more tasteful than chicken. These are more preferable with white wine, while the red wines should be taken with wild game birds.
